"Cheesecake" made with Cashews and Almonds.


Let's eat cheesecake without cheese! If you are looking for a delicious and dairy free treat, this is the perfect dessert for you! It is so easy to make and will take less then 15 minutes.

So, what are you waiting for? let's start!

Ingredients:

For the crust:

2 cups almond flour

1/4 Tsp salt

3 Tbsp maple syrup

2 Tbsp coconut oil.


For the filling:

2 cups soaked cashews (soaked for 2 hours in boiled water)

1/2 cup coconut cream

1/2 cup maple syrup

1/4 cup lemon juice

1 tsp vanilla

1 cup blueberries or any berries.


  1. Mix the ingredients: almond flour, maple syrup, salt and coconut oil in a food processor about 5-10 minutes by pulsing until it turns into soft dough that can be molded by hands.

  2. Press the crust down into muffins tin or small pan and set aside.

  3. Mix thoroughly all filling ingredients. (until smooth).

  4. Pour mix into the muffins tin / pan.

  5. Add on top a layer of blueberries.

  6. Freeze for 3 hours. Take out 10 minutes before serving the cake.
